Personality: This purely depends on what point of canon he's in. 

In all canon points, he's a strong-willed, extremely knowledgeable man who keeps a cool exterior to hide the deep emotions that always bubble right under the surface. He's observant, inquisitive, and thinks at least three steps ahead. Unfortunately, he is prone to be impulsive when he absolutely shouldn't, which has gotten him into trouble more than once. He sticks to his guns, almost to his detriment, and is a good man to have on your side in a tough spot. He's also very conflicted, unsure of his place in the world and where he stands in it, desperate to be able to live his own life and be the master of his own destiny, rather than a tool for others to use.

Pre-canon / Chapter 1: Delita is probably at his most emotionally vulnerable and yet most mentally healthy here. He has the companionship of close friends, will lend a hand for those who want it, and he's much more willing to be openly heroic than he is as he grows older and more jaded. His berserk buttons are his best friend, Ramza, and his younger sister -- for them, he would do anything, be anything, and would not hesitate to throw his life on the line for them. At the same time, he feels out of place because of his common birth, even though he was brought up as nobility ever since Ramza's father took him in. As his world crashes around him, he spirals out of control, and is more willing to go into rages and even distrust Ramza in a fit of violent grief. 

Mid-canon: Delita is a cool-headed man who likes to keep things close to the vest. His personality is still the same, but he keeps his nobler traits hidden, jaded by working with the Church, trying to fulfill his own ambitions, and frustrated that things aren't quite going the way he wants. The ends justify the means, and he has killed a lot of people to try to put himself on the throne to change Ivalice for the better (and get back at the nobles who used him and killed his sister). Still, for all that he seems confident and sure of what he's doing, Ramza brings out those old insecurities, and with him, he can let his guard down. Is he also manipulating Ramza for his own ends, or is he trying to be genuine to his old friend? For fear of deviating into headcanon, I think it's somewhere in the middle. Delita knows Ramza can Get Shit Done and trusts him to do so, but it's not as a puppet master holding up the strings, but as a man who fought alongside him years ago, knowing what he's capable of and trusts him implicitly. For all his bravado, the chinks in his armor start to show in his and Ramza's final encounter at the Church, and as everything starts to come together, he feels more trapped now than he's ever been. Chained by his own ambition and his own folly, all he can do is move forward in hopes that it will somehow all come together, even if that means playing a part that he no longer feels comfortable playing.

Post-canon: Delita is a broken man, having attained the throne but lost everything in the process. His wife distrusts him, enough to try killing him; he lost his best friend; the Church controls him like a puppet and he's still a tool, just with a prettier box; he led Ivalice to a Golden Age, but he's hardly able to enjoy the fruits of his labor. He keeps going forward, because he is nothing if not determined to at least try to make the world better, but he's extremely unhappy. He has no friends, he has no family, and he's alone with the power and prestige that he fought so hard for, only for everything else to crumble around him.
